Easter is coming up, and even though we won’t be able to gather in person this year, I know I’m looking forward to making something special and enjoying it virtually with family via a video call! I’ve put together some of my favorite brunch recipes for Easter in hopes that they brighten your (un-social) Easter this year, too.

It does take some time in the oven, but the prep is minimal. Adding a crumble of goat cheese on top makes it even more mouth-watering.

Sweet Potato Hash with Poached Eggs

With the combo of sweet potatoes, eggs, and spring veggies, this is a perfect spring brunch recipe. But the real star of this hash (besides the poached eggs, of course) is the fabulous seasoning.

Serve on its own or with a side of fruit, toast, and/or a baked treat!
